Instructions
- 1.Sour 2/3 cup of milk with 2 tablespoons of lemon juice and let it sit for 5 minutes.
- 2.In a bowl, combine sugar and salt, then sift in flour, baking powder, and baking soda and stir to mix.
- 3.Make a well in the center and add the egg, melted butter, and soured milk, then gently fold with a spatula until just combined, leaving some lumps. Rest the batter for 5 minutes.
- 4.For the sauce, simmer blueberries with sugar and water, then stir in the cornstarch slurry and cook until thickened. Cool.
- 5.Lightly grease a preheated pan with vegetable oil and pour in the batter to make one large or several small pancakes.
- 6.Cook for 2–3 minutes until bubbles appear and edges look dry, then flip and cook another 2 minutes until golden.
- 7.Serve the pancakes warm, drizzled with the blueberry sauce.
