Instructions
- 1.Preheat the oven to 400°F and line a large baking sheet with parchment paper.
- 2.Combine butter, water, and salt in a medium saucepan and bring to a full rolling boil over medium-high heat.
- 3.Add the flour all at once, reduce heat to medium-low, and stir with a spatula until the dough is smooth and pulls away from the sides of the pan.
- 4.Remove from heat and stir for 1 to 2 minutes to let the dough cool slightly.
- 5.Add the eggs one at a time, stirring vigorously until each is fully incorporated and the batter is smooth, velvety, and uniform.
- 6.Transfer the dough to a piping bag, snip the end, and pipe 2 to 2 1/2 inch mounds onto the prepared baking sheet, smoothing any peaks with damp fingers.
- 7.Bake at 400°F for about 30 minutes or until light golden brown and dry.
- 8.Turn off the oven, prop the door open, and let the pastries sit inside for another 10 minutes before cooling completely on the baking sheet.
